Apricot Oatmeal Crumble Bars
Made with naturally sweetened apricot chia seed jam and topped with an irresistible coconut oatmeal crumble.
1 cup almond meal
1 cup oat flour
1 and 1/2 cup oats
1/2 cup unsweetened shredded coconut
2 tablespoons ground chia seed or flax seed
1 teaspoon baking soda
1 teaspoon fine sea salt
1/3 cup + 1 tablespoon melted unrefined coconut oil
1 teaspoon vanilla extract
2 tablespoons water
1/3 cup raw honey (substitute maple and brown rice syrup for vegan)
Apricot Chia Jam:
3 cups chopped apricots
2 tablespoons honey (substitute maple and brown rice syrup for vegan)
1/2 teaspoon vanilla extract
2 tablespoon lemon juice (approx. 1 lemon)
3 tablespoon chia seeds
