This Asparagus Artichoke Pesto Hummus Sandwich is fresh, healthy, and so quick to throw together!
8 stalks of asparagus, halved
1 teaspoon extra virgin olive oil
salt and pepper, to taste
4 slices of bread of choice, use gluten free if needed
4 tablespoons hummus of choice
2 tablespoons homemade or store bought pesto
4 artichoke hearts, halved (I use Trader Joe’s brand)
