Ingredients
1 large red pepper, diced
1/2 pound cherry tomatoes, diced
1 avocado, pitted and diced
1 red onion, diced
1 mango, peeled, pitted and diced
1 small can corn kernels
1 15-ounce can black beans
For the Dressing:
Juice of 2-3 limes (depending on the size and yield of your limes)
3 tablespoons olive oil
Large handful of cilantro, chopped
Salt & pepper, to taste
