Creamy and bright with the flavors of fresh basil and a touch of garlic, this egg salad is a fun variation on a classic. Serve it atop a thick slice of heirloom tomato for a gluten-free, low-carb lunch.

Ingredients

6 large hard-boiled eggs, peeled
1/3 cup mayonnaise
2 tablespoons chopped basil
1 teaspoon extra virgin olive oil
1/4 teaspoon fresh lemon juice
1/4 teaspoon minced garlic
1/4 teaspoon kosher salt
freshly ground pepper
