BBQ Black Eyed Pea Collard Rolls

Ingredients
For the Rolls:
2 Bunches of Collard Leaves for
9 Large, Whole Collard Leaves and 3 C Chopped Collards (about 6 oz)
1 tsp Coconut Oil
1½ C Slow Cooked Black Eyed Peas (recipe at Vanilla And Bean)
2 C Crimini Mushrooms, stemmed and chopped in small dice
3 dashes of Tabasco, or to taste
⅛ tsp Salt
⅛ tsp Pepper
For the BBQ Sauce (yields about 1 Cup)
½ C Ketchup
¼ C Maple Syrup
¼ C Balsamic Vinegar
½ tsp Liquid Smoke
8 dashes of Tabasco or to taste
