Beet Burgers with Garlic Aioli
Beet burgers are packed with flavor and nutrients. It’s a fun alternative to standard veggie burgers, and you can’t “beet” the beautiful red color!
For the Beet Burgers:
1 medium/large beet, peeled
1 small sweet potato, peeled
1/4 large onion
1 tablespoon olive oil
1 cup packed spinach
1 cup oatmeal (quick oats or pulse rolled oats in a food processor until ground)
15 oz can cannelini beans, drained and rinsed
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon dried parsley
1/4 teaspoon cumin
2 tablespoons ground flax plus 6 tablespoons water
For the Garlic Aioli:
1 cup mayonnaise
2 tablespoons lemon juice
1 1/2 teaspoons minced garlic
1/4 teaspoon black pepper
1/4 teaspoon kosher salt
