An easy, healthy breakfast bake that comes together quickly and fills your home with the warm aroma of oats and berries.
Ingredients
1 Tbsp (14 g) butter or flavorless oil
3 ripe bananas, sliced
2 ½ cups frozen or 1 ½ cups thawed (12 oz, 340 g) mixed berries
½ cup (94 g) fine or medium grind bulgur
½ cup (67 g) rolled oats
3 Tbsp (25 g) brown sugar
¼ tsp (1.5 g) salt
1 tsp (2.6 g) cinnamon
2 cups (473 mL) milk (whichever variety, I used almond milk)
2 eggs
1 tsp (5 mL) vanilla extract
½ cup (20 g) coconut flakes (optional)
