Delectable shortbread cookies with less than five ingredients.
¾ cup butter, at room temperature
½ cup powdered sugar
½ tsp. vanilla
1 ½ cup soft white wheat flour
Pinch of salt
Preheat oven to 325°. Using cooking spray, lightly spray pan. Cream butter until very creamy and slowly beat in powdered sugar and vanilla.
Mix the salt and flour together in a medium size bowl. Then using a wooden spoon, slowly work in the flour and salt, then turn onto an unfloured surface and knead until completely blended.
Firmly press dough into baking pan and prick all of the surface with a fork (make a design if you like).
Bake for 25 minutes or until lightly browned. Let cool in pan for 10 minutes, carefully loosen edges from pan and invert onto a cutting board.
