Black bean arepas with mango and aji
Colombian ricotta arepas topped with spiced black beans, mango, and aji sauce!
FOR THE PICKLED ONION:
1 cup apple cider vinegar
2 cups white vinegar
1 Tablespoon sugar
1 teaspoon salt
1 red onion, thinly sliced
FOR THE AJI:
1 bunch fresh cilantro
2 habaneros, stems removed
The juice of 2 limes
½ cup sliced green onion
½ cup water
salt and pepper
FOR THE BEANS:
1 Tablespoon avocado or olive oil
½ yellow onion, diced
1 15oz can black beans, drained and rinsed
1 garlic clove, minced
2 teaspoons paprika
1 teaspoon ground turmeric
1 teaspoon dried oregano
salt and pepper
FOR THE AREPAS:
2 cups Harina PAN or masarepa
2 cups warm water
½ cup ricotta cheese
vegetable oil for frying
THE TOPPINGS:
2 mangos, peeled and diced
2 avocados, cut into slices
cotija cheese or queso fresco, crumbled
