This Black Bean & Avocado Egg Hash Skillet is packed with nutritious ingredients and is naturally gluten free!

Ingredients

2 tablespoons extra virgin olive oil or avocado oil (divided)
1/2 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon garlic powder
salt and pepper, as desired
1/2 cup black beans
3-4 cage-free eggs
1/2 avocado, diced
1/4 cup green onion, sliced
1/4 cup cilantro leaves, chopped
1 Medium yellow onion, diced
2-3 Medium red potatoes, chopped into 1/2” cubes
