This simple Black Bean Soup is perfect to serve a crowd and packs a high nutritious punch.
Ingredients
4 (15 ounce) cans black beans, drained and rinsed
2 tsp coconut oil
1 red pepper, chopped
4 carrots, peeled and chopped
2 celery stalks, chopped
1 onion, chopped
2 garlic cloves, chopped
4 cups water
2 tsp cumin
2-3 tsp salt (I like to start with 2 tsp and add as needed)
1 tsp chili powder
Juice of 1 lemon
