Blueberry Oatmeal Muffins

These muffins have no butter, no oil, and no refined sugar! But they are still moist and delicious, thanks to a hidden banana and yogurt.

1 large overripe banana
2 eggs
1 cup yogurt (regular or low-fat)
¼ cup maple syrup
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
½ teaspoon salt
1 ½ teaspoons baking powder
½ teaspoon baking soda
¾ cup rolled oats (plus 1 tablespoon, for topping)
1 cup spelt flour
1 cup fresh or frozen blueberries
