Brazil Nut Chowder Two Ways

A family-friendly soup with loads of flavor. Pureed or not, this vegan chowder is comfort food that is sure to be a crowd-pleaser come dinnertime. Wonderful leftover for lunch, too!
Ingredients
1 red onion, diced
3 cloves garlic, minced
1 jalapeno, seeded and diced
1 teaspoon each chili powder, smoked paprika, coriander, berbere
1/2 cup nutritional yeast
4 cups peeled and chopped potatoes of your choice
2 cups corn, fresh or frozen
4 cups Brazil nut milk, recipe follows
5 cups vegetable broth
Optional garnishes: Scallions, smoked paprika, nutritional yeast, tomatillo, cilantro, lime
