Broccoli and feta fritters are the perfect vegetarian lunch option – crispy on the outside, soft and creamy inside, the flavours of both the broccoli and the feta really shine through.
Ingredients
110g broccoli
2 medium eggs
70g plain flour
70g feta, crumbled
2 cloves garlic, minced
2tbsp fresh parsley, chopped
Salt
Black pepper
4tbsp oil for frying
Fresh lemon, to serve
