Brown Rice Veggie Bowl with Peanut Sauce
Comforting, hearty brown rice is topped with edamame, sliced carrots and radishes and a creamy, spicy homemade peanut sauce, making this bowl a big dose of healthy, comforting plant-based goodness.
Rice Ingredients:
½ cup brown rice
1 cup water
½ teaspoon rice vinegar
Big pinch salt
Peanut Sauce Ingredients:
½ cup peanut butter
Juice of half a lime
4 tablespoons water
1 ½ tablespoon soy sauce
1 tablespoon rice vinegar
1 square inch chunk ginger, peeled and minced/finely grated
Sriracha, to taste
Optional: salt and pepper, to taste
Vegetables Ingredients:
1 cup frozen edamame
1 cup water
1 carrot, thinly sliced
2 radishes, thinly sliced
