Ingredients
1.5 lb butternut squash
1 green plantain
½ onion chopped
1tsp cumin
1 tsp chili powder
½ tsp salt
dash pepper
2 chipotle peppers en adobo, finely chopped
2 oz cream cheese
1/3 cup nonfat greek yogurt
1 tbs lime juice
1 16 oz jar of salsa verde
6 small corn tortillas
1.5 oz or 1/3 cup Monterey jack cheese
¼ cup cilantro, roughly chopped
