A creamy, vegan chia seed pudding with all of the spicy goodness of traditional carrot cake.
Ingredients
½ cup raw cashews, soaked for 2-4 hours, drained and rinsed
½ cup chopped raw carrot (about 1 small)
2 cups water
2 tsp pure vanilla extract
3 tbsp agave
1 tbsp fresh ginger
¼ tsp cinnamon
pinch sea salt
¼ cup whole chia seeds
