Carrot Magic Cake

Carrot Magic Cake – 1 batter during baking magically separates into 3 layers: dense on the bottom, custard in the middle, sponge on top; step-by-step instructions.

4 eggs, separated, at room temperature
a few drops of lemon juice
1 Tbsp water
½ cup + 2 Tablespoons (150 g) sugar
2 tsp vanilla extract
1 stick + 2 tsp (125 g) butter, melted
¾ cup + 1 Tbsp (115 g) all-purpose flour
½ cup carrot puree
2 tsp gingerbread spice (cinnamon, ginger, allspice, nutmeg, cloves)
2 cups (500 ml) milk, lukewarm
