This carrot Parmesan risotto is a perfect spring side dish.
Ingredients
4 cups vegetable stock
1 tablespoon butter
1 medium red onion, finely chopped
6 medium carrots, grated
Kosher salt and ground pepper
1 1/4 cups short grain rice. I used calrose, other options are arborio or carnaroli.
1/4 cup dry white wine
1/2 cup freshly grated Parmesan
