Cashew-Chocolate Granola

Cashew-chocolate granola is great for breakfast or snacking. It’s also gluten free and vegan.
Ingredients
4 cups old fashioned oats
1 cup unsalted cashews
1/4 cup cocoa nibs (I used Theo Chocolate)
1/4 tsp. salt
1/2 cup cashew butter
1/3 cup coconut oil
1/3 cup maple syrup (Grade B is preferable)
1 cup banana chips
4 ounces dark chocolate, chopped
