Cauliflower & Olive Salad with Miso
Salad of roasted cauliflower, crispy chickpeas, kalamata olives, sun-dried tomatoes, and feta tossed in a miso dressing.
SALAD
1 large head cauliflower
3 tablespoons extra-virgin olive oil, divided
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
2 1/2 cups cooked chickpeas
1/2 teaspoon sweet Hungarian paprika
2 teaspoons garlic paste (I use Gourmet Garden’s)
1/2 cup thinly sliced sun-dried tomatoes,
1/3 cup halved kalamata olives
1/4 cup crumbled feta cheese
1 teaspoon fresh marjoram, or more to taste
MISO DRESSING
1/4 cup fresh lemon juice
1/3 cup extra-virgin olive oil
3 tablespoons yellow miso
pinch cayenne pepper
Pinch salt + pepper to taste
