Ingredients
5 cups cauliflower florets (approx. 2lb head of cauliflower)
2 cups chopped leeks (approx. 3 medium-size leeks)
4 cups cubed and peeled russet potatoes (approx 2 large potatoes)
3 cloves garlic, minced
1 tablespoon olive oil
4 cups vegetable broth
1 cup milk (I used unsweetened plain almond milk)
1/4 teaspoon salt
1/4 teaspoon pepper
fresh chives, chopped
