Chickpea and zucchini lemon tajine

A quick and easy vegan tajine which pairs zucchinis and chickpeas, with a delicate lemon flavour. Can be served as a main dish, with a side of coucous, or as a side for your favourite vegetarian keftas or meatballs.
Ingredients
4 small zucchinis, sliced lengthwise, and chopped in 1/2 inch slices
1 can chickpeas, drained
1 big yellow onion, sliced
1 clove garlic, minced
the peel of 1 organic lemon, sliced in large ribbons with a vegetable peeler
4 bay leaves
2 tsp cumin seeds
1 tsp ground coriander
1/4 tsp ground cinnamon
salt and olive oil
