A slightly sweet and perfectly dense muffin with tons of added nutrition due to zucchini, banana, and chickpea flour.
Ingredients
1 cup chickpea flour
1/2 cup old fashioned oats (ground into a flour, measured before grinding)
1/2 teaspoon nutmeg
1/4 teaspoon cloves
2 teaspoons cinnamon
1/3 cup sugar (coconut, white, palm)
1/2 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
2 small zucchinis (grated)
1 medium ripe banana (mashed)
1 teaspoon vanilla extract
1/3 cup applesauce
1/2 cup egg whites
3 tablespoons maple syrup
optional: 1/3 cup raisins or chocolate chips
