Chickpea Walnut Burger with Cranberry Mayonnaise
This Chickpea Walnut Burger with Cranberry Mayonnaise combines a rustic walnut patty with sweet and creamy cranberry mayonnaise to make a heavenly synergy.
6 burger buns (I recommend my homemade pretzel buns)
For the burger patties:
1 zucchini, grated
1/2 onion, grated
1 can chickpeas (265 g when drained)
50 g walnuts
2 Tsp cumin
1/3 Tsp cinnamon
3 Tbsp flour of choice
Salt
Black pepper
Sunflower seed oil for frying
For the cranberry mayonnaise:
70 g cashews
70 mL water
1 Tbsp apple cider vinegar
50 g + 20 g dried cranberries
Salt
For topping (this is what I used, but you can top with whatever you like):
salad
avocado
spring onions
