Chipotle Sweet Potato Salad

Potato Salad gets a healthy makeover. A smokey chipotle mix of sweet potatoes, black beans, corn, roasted red peppers and cilantro. Can be served chilled, room temperature, or even hot.
Ingredients
2 medium sweet potatoes, cut in 1 inch chunks
1 Tablespoon Mrs. Dash southwest chipotle seasoning (or your favorite chipotle blend)
1 Tablespoon olive oil
1 Tablespoons brown sugar, reserved
1 can corn
1 can black beans, rinsed & drained
½ cup roasted red pepper, diced
¼ cup fresh cilantro, roughly chopped
