Chocolate Coconut Granola Bars

These homemade granola bars are great for a snack and are put together in just a few minutes!
Ingredients
¼ cup coconut oil
¼ cup brown sugar
¼ cup honey
¼ cup almond butter
1 teaspoon vanilla extract
1½ cup quick oats
½ cup uncooked quinoa
1 cup dried fruit (I used dates and craisins)
½ cup chopped almonds (unsalted)
1 cup toasted coconut (to toast – place coconut evenly on a baking sheet in an 350 degrees F oven for 8-10 minutes, stirring occasionally until golden brown)
1 cup mini chocolate chips
