Ingredients
For the crust:
1 cup brown rice flour
1 1/2 cup almond flour
1/4 cup cocoa/cacao powder
1/2 tsp Himalayan pink salt
1/2 cup coconut oil
1/3 cup maple syrup
For the mousse filling:
3 1/2 cups full-fat coconut milk
4 tsp lime zest (from 2 limes)
1/4 tsp Himalayan pink salt
1 3/4 tsp powdered agar-agar (or 3 tbsp flaked)
4 tbsp lime juice (from 2 limes)
2 tbsp potato starch
1 tsp vanilla
