Cilantro Lime Cauliflower Rice

Riced cauliflower and grated carrots sautéed in coconut oil and tossed with cilantro and lime! Perfect vegan side!
Ingredients
1 small head of cauliflower (or 1/2 of a large head)
2 carrots
2 tablespoons coconut oil
1 cup diced spring onion
½ tablespoon Gourmet Garden Garlic Paste
2 tablespoons freshly squeezed lime juice
zest of 1 lime
½ cup cilantro, coarsely chopped
1 teaspoon kosher salt, or to taste
1/4 – 1/2 teaspoon dried red pepper flakes
