Sweet, crunchy, and full of flavor, coconut almond granola tastes great on its own or sprinkled over yogurt. So good you’ll want to make a double batch!

1 1/2 cups oatmeal
1/2 cup (heaping) shredded coconut
1/2 cup (heaping) sliced unsalted almonds
1/4 teaspoon kosher salt
1 tablespoon extra virgin coconut oil, melted
1/3 cup honey
1 teaspoon vanilla
