Coconut Matcha Horchata: A naturally green drink made with almonds and rice.
Ingredients
Day 1:
1¼ cup whole raw almonds (or blanched almonds)
6 tablespoons long-grain white rice (like jasmine rice)
1 3-inch piece of cinnamon (ceylon)
3 cups boiling water
Day 2:
7 tablespoons sugar
2¼ cups cold water, divided
2 tablespoons ceremonial-grade matcha
2 tablespoons canned coconut cream (or the cream from the top of an unshaken can of full-fat coconut milk)
¼ teaspoon pure vanilla extract
Pinch of salt
