This healthier sweet potato pie is a perfect Thanksgiving alternative to pumpkin pie.
Ingredients
1 cup all-purpose flour
1/2 cup whole wheat flour
2 teaspoons sugar
1/2 teaspoon salt
1 stick butter, cut into 1/2″ pieces, chilled
4-5 tablespoons ice water
2 medium sweet potatoes (about 1 pound), peeled and cut into chunks
1/2 cup melted coconut oil
2 eggs
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1 teaspoon vanilla extract
1/4 cup maple syrup
1/2 cup granulated sugar
2 teaspoon lemon juice
Pinch of salt
