Ingredients
6 ears fresh corn
1 cup shelled edamame, cooked
1 (15 ounce) can chickpeas, rinsed, drained, and patted dry
2 cups cherry tomatoes, halved
1/2 red onion, diced
1/4 cup crumbled feta cheese
3 tablespoons freshly chopped cilantro
Juice of one lime
4 tablespoons olive oil
4 tablespoons white balsamic vinegar
Salt and pepper, to taste
