This creamy butternut squash sauce is a play on my favourite pasta sauce of all time! Using butternut squash instead of roasted red peppers in this recipe makes it the ultimate form of fall comfort food!
Ingredients
3 cups butternut squash cubes
2 cups water
6 Tbsp light cream cheese
1/2 cup freshly grated parmesan cheese
3 Tbsp finely chopped almonds
2 cloves garlic, minced
hot sauce to taste
pepper to taste
350 grams Rigatoni
