Curried Apple Chutney
This autumn chutney is loaded with apples, peppers, leeks, and dried cranberries along with the deep warming flavor of yellow curry powder. Use it as a dip, topping, relish, or stir it into rice!
7 apples, peeled, cored and diced
1/2 cup apple cider
1/4 cup apple cider vinegar or white distilled vinegar
1/4 cup maple syrup, sugar or honey
1 red bell pepper, seeded and minced
1/3 green bell pepper, seeded and minced (about 2 Tablespoons)
1/2 poblano pepper, seeded and minced (about 2 Tablespoons)
1 serrano pepper, minced (seeds removed for less heat)
1 cup chopped leeks, from about 2 – 3 leeks (white and light green parts)
1/4 cup dried cranberries
1 Tablespoon mustard seeds
1 Tablespoon curry powder
