Ingredients
3 yellow peppers, deseeded and chopped
2 sweet potatoes, cubed
4 carrots, chopped
1 aubergine, cubed
1 red onion, peeled and quartered
4 cloves garlic, peeled
2 sprigs rosemary, finely chopped
1tsp dried chilli flakes
Salt and pepper
Olive oil
300g cooked chickpeas
2L vegetable stock
A handful small purple potatoes, peeled
