This refreshing mango, quinoa and black bean salad is the perfect bring-along to any potluck or gathering – and it also makes a tasty, easy lunch or dinner.
Ingredients
1 can of black beans, drained and rinsed (15 ounce size)
2 cups of cooked quinoa
1 cup of diced mango
½ cup of finely diced red bell pepper
4 tablespoons olive oil
2 tablespoons lime juice
¼ cup minced fresh cilantro leaves
salt and pepper to taste
optional garnishes: cilantro sprigs and lime slices
