Easy Vegan Baked Oatmeal

Serves: 8 cups

No eggs or dairy needed to make this vegan baked oatmeal delicious! Apples, raisins and pecans give it sweetness, crunch and old-fashioned flavor.

Ingredients

2⅔ c old-fashioned oats (certified GF if needed)
½ c raisins
4 c unsweetened almond milk
¼ c maple syrup
¼ c unsweetened applesauce
2 tsp cinnamon
few dashes nutmeg
¼ tsp salt
2 apples, cored and chopped
½ c pecans, chopped
1 tsp vanilla
