Eggless crêpes with cinnamon apples and caramel
Eggless crêpes with cinnamon apples and caramel are easy to make and delicious. They are vegan and gluten-free and can be refined sugar free too.
GLUTEN-FREE BATTER:
180 g / 1½ cups buckwheat flour
6 tbsp rice flour
2 tbsp cornflour / cornstarch
60 ml / ¼ cup reduced aquafaba, from a tin of chickpeas or homemade
approx. 600 ml / 2½ cups plant milk (I used almond milk)
1 tbsp melted refined coconut oil or mild olive oil, plus more for frying
1 tbsp maple syrup (optional)
3 tbsp toasted almond flakes, to serve
CINNAMON APPLES:
1 tbsp coconut oil or mild olive oil
3 sour apples (I used Granny Smith)
2 tsp cinnamon
CARAMEL SAUCE (SUGAR VERSION):
100 g / ½ cup sugar
120-180 ml / ½ cup full fat (tinned) coconut milk + ¼ cup (see instructions)
a good pinch of salt
CARAMEL SAUCE (HEALTHIER ALTERNATIVE):
120 ml / ½ cup maple syrup
2 tbsp smooth (100% natural – almonds only) almond butter
a good pinch of salt
