Eggplant curry is a colorful combination of spice, vegetables and zest!
Ingredients
2 Japanese eggplants, approximately 10 oz.
5 oz. of chopped onion
3 tbsp of oil
1/2 tsp of whole cumin seeds
1-2 tsp of red chili pepper
1/2 tsp of turmeric powder
1/2 tsp of marjoram seeds
1 tsp of nigella seeds
2 tbsp of yogurt
1-11/2 tsp of salt
1 green chili chopped
Juice from 1/4 lemon
Cilantro leaves for garnish
