A creamy, dreamy, cloud-like (and vegan!) pistachio mousse.
Ingredients
1 cup boiling water
1 cup shelled, raw, unsalted pistachios
1 small avocado, flesh only
1/3 cup fresh baby spinach, tightly packed
¼ cup coconut sugar
2 tsp lemon juice
½ tsp almond extract
½ tsp vanilla extract
3 tbsp finely chopped pistachios, for garnish
3-4 tbsp pure maple syrup, for drizzling (optional)
