Whole wheat “everything” flatbread is simple to make and goes perfectly with the creamy Indian-inspired zucchini butter.
Ingredients
1 3/4 cup whole wheat flour (can also use all purpose)
1 Tablespoon dried onion flakes
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup water
1/3 cup olive oil, plus more for brushing
poppy seeds
black (or white) sesame seeds
smoked salt
course or flaked salt
2 pounds zucchini and/or various summer squash
1/4 cup olive oil
3 Tablespoons minced onion
2 large cloves garlic, minced
1 – 2 teaspoons curry powder
1 teaspoon salt
1/8 teaspoon pepper
