An easy recipe for a sliced fennel and apple salad with raisins, walnuts and a homemade lemon dressing.
Ingredients
2 tablespoons apple cider vinegar
1 tablespoon extra-virgin olive oil
Juice from half a lemon
1 tsp. Dijon mustard
1/2 tsp. sugar
1/4 tsp. salt
1/4 tsp. black pepper
1 Granny Smith apple, cored and thinly sliced
1 medium fennel bulb, trimmed and thinly sliced (reserve a few fronds)
2/3 cups walnuts, chopped
1/3 cup golden raisins
