A gluten-free and paleo-friendly zucchini bread with non-dairy sweet cashew cream cheese.
Ingredients
3 zucchinis (about 3 cups total: 1 cup shredded, remaining cups pureed)
4 whole eggs
1 egg white
½ cup maple syrup
½ cup + 2 tablespoons coconut flour
¼ cup + 2 tablespoons of almond flour
2 tablespoons of cold pressed organic coconut oil (or grass-fed butter)
1 tablespoon ground flax seed
1 teaspoon of baking soda
1 teaspoon of baking powder
1 tablespoon of cinnamon
1 teaspoon vanilla extract
1 teaspoon of fresh ground nutmeg
pinch of sea salt
