Ingredients
4 medium to large zucchini
2 tablespoons extra virgin olive oil
2 tablespoons minced ginger
5 cups shiitake mushrooms, sliced
8 cups vegetable broth, divided
2 cups, plus 1 tablespoon water, divided
1/2 teaspoons red pepper flakes
5 tablespoons low-sodium tamari sauce or soy sauce
2 cups thinly sliced scallions, divided
4 large eggs, beaten
3 tablespoons corn starch
Salt & pepper to taste
