Gluten Free Asparagus Tart

This gluten free asparagus tart has a crispy potato crust and is topped with gooey fontina cheese and savory roasted garlic. Perfect for weekend brunch!

Ingredients

4 tablespoons olive oil, divided
2 medium russet potatoes (about 1 pound)
1/4 teaspoon salt
1/4 teaspoon pepper
1 head garlic
6 medium eggs
1/4 cup whole milk
1 pound asparagus, ends trimmed and spears cut in half
4 ounces fontina cheese
