Gluten-free Buttermilk Skillet Cornbread.
Ingredients
1 cup yellow cornmeal
1/2 cup sweet rice flour
1/2 cup gluten-free oat flour (I make my own by grinding gluten-free rolled oats in a food processor or blender until fine)
½ teaspoon salt
¼ cup unsalted butter
3 tablespoons vegetable oil
2/3 cup sugar
2 eggs
1 cup buttermilk
½ teaspoon baking soda
¾ cup frozen corn
