A light and flavourful vegan, gluten-free waffle recipe, made with shredded coconut and mashed banana for tropical bliss in each bite.
Ingredients
2 bananas, mashed
2 cups coconut milk
4 tbsp melted coconut oil
2 tsp vanilla
2 cups gluten-free all purpose flour
2 tbsp potato starch
4 tsp baking powder
1 tsp salt
1 cup shredded or flaked coconut
4 tbsp coconut sugar
the cream from one can of coconut milk (see note)
1/2 tbsp maple syrup, or to taste
1 tsp vanilla (optional)
