Gluten-Free Pumpkin Crumb Muffins
These moist, fluffy pumpkin muffins are just what you need to get you going in the morning. The prep is very simple, and they’re gluten-free!
Muffins:
cooking spray or oil for greasing pan
1½ cups + 2 TBS gluten-free flour blend
2 tsp ground cinnamon

½ tsp ground nutmeg
½ tsp ground allspice
1 tsp baking powder
1 tsp baking soda
½ tsp salt
¾ cup (180) pumpkin puree
½ cup (220g) honey
⅓ cup (70g) coconut oil, melted
2 large eggs
1 tsp pure vanilla extract
4 oz (115g) bittersweet chocolate baking bar, chopped
Crumb Topping:
1 TBS unsalted butter
2 TBS gluten-free flour blend
2 TBS turbinado sugar
½ tsp cinnamon
