Creamy, grated potato casserole – strands of silky, tender potato in garlicky cream sauce with a Parmesan-black pepper crust.
Ingredients
500g waxy potatoes (no need to peel)
2 garlic cloves
a glug of drinkable white wine
1 heaped teaspoon vegetable stock paste
200ml water
150ml double/heavy cream
few scrapes of whole nutmeg, or to taste
freshly ground black pepper, to taste
sea salt, to taste
100g flavourful hard cheese (I used Parmesan), finely grated
